Few things in life are cozier than a large plate of bubbling baked spaghetti (pasta al forno). This version has a creamy and somewhat spicy tomato sauce and is cooked with Italian sausages for added flavor.

For as long as I can remember, I have been preparing this sausage pasta bake, and it always hits the spot. Better better, it's inexpensive and incredibly simple to prepare on a hectic weekday. You can also omit the meat (see to the section below for advice).
Ingredients: A Requirement

De Cecco rigatoni pasta, or any other short pasta shape, is what I suggest.

Meats: I prefer Italian sausages as they have a lot of flavor and are frequently prepared with red wine and spices.

Garlic: Use only fresh cloves; avoid using any sort of powdered garlic.

Mascarpone: I adore using a small amount of mascarpone to create a gorgeous, creamy sauce. A dollop of heavy cream or even ricotta might be substituted.

Smoothly pureed tomatoes (not concentrated) are called passata. In the US, it's often called crushed strained tomatoes or pureed tomatoes. I suggest trying Cirio Passata Classica; keep in mind that quality matters a lot when it comes to tomatoes in general.

Mozzarella: Before the pasta is cooked to a boiling, melting perfection, fresh mozzarella is sprinkled on top.

Dried herbs & spices: For added flavor and a hint of heat, I use red pepper flakes and dried oregano!

A Step-by-Step Guide to Baking Salsa Pasta

Pasta will be cooked in the oven after it is brought to a boil in a salted saucepan of water and cooked for about three minutes less than done. Keep ½ cup of pasta water aside for the sauce.

Remove the sausage flesh by pressing it out of the skin and brown it in a skillet without adding more olive oil. When browned, mix in the oregano, red pepper flakes, and sliced garlic (see photographs 1-3).

Add the pureed tomatoes (passata) and the pasta water that was set aside after one minute of frying the garlic and spices. After about five minutes of simmering the sauce, remove from the heat and stir in the mascarpone. Add it to the tomato sauce and stir (pictures 4-6).

When the pasta is well coated, add the drained spaghetti to the sauce and stir. Place it in an ovenproof baking dish, cover with mozzarella, and bake for about 8 to 9 minutes, or until the cheese is golden and bubbling.
